Basic Red Sauce

This basic sauce uses high quality San Marzano tomatoes. The tomatoes are not cooked long to preserve the fresh acidity. The addition of chili flake gives this sauce a mild heat, resulting in a zesty, fresh flavor.

 

2 tbsp Olive Oil, Extra Virgin


4-6 Garlic cloves, sliced


1 tsp Salt


1-2 tsp Calabrian Chili or Red Pepper flake


1 can (14.5oz) Whole Peeled San Marzano Tomato


2 sprigs Fresh Basil, whole with stems

 

 

In a medium sauté pan, on medium/low heat, add olive oil and heat for 30 seconds. Add garlic and sauté for 40 seconds to 1 minute, be careful not to burn the garlic. Next add the chili pepper and sauté for 10 to 15 seconds, add whole tomato and whole basil and bring to a simmer. Once it reaches a simmer, remove from heat and blend until smooth.
